No worries.īall canning actually has a pretty simple process for extracting juice from fresh apples without any equipment besides a stockpot. It’s wonderfully efficient and makes crystal clear apple juice (and just about any other juice). I happened to find an old Breville juicer secondhand for a few bucks. Believe it or not, storebought apple juice is often full of artificial flavorings (and boatloads of sugar). My kids though, they’re all about apple juice, and if my littles are going to be drinking something I’d prefer to know it’s wholesome. I’m all about fresh apple cider, and we press our own every year on an old school double-barrel cider press. I’ll admit, apple juice wasn’t really a part of my pantry until I had kids. Simply spray or pour a small amount into the cogs after washing. If you find the cogs are getting a bit stiff, you can use a bit of food grade AC-90 lubricant, provided with the Scratter, or you can use rapeseed oil. Make sure to clean the Apple Scratter by running warm water through it when you are finished. Then lie them on their sides, so that the warm juice sterilises the lids, which might have picked up some germs while the bottles were cooking. Before the pasteurised juice cools down, screw the tops back on the bottles. Don’t overheat the juice or it will oxidise, spoiling the flavour. You might need to add some cold water to the pans from time to time to keep the temperature steady. You should keep them as close as possible to 77C for half an hour. You can pastuerise your apple juice by leaving the caps off and putting them in the pans of hot water. Next fill your sterilised bottles with your freshly squeezed juice. Immediately before filling them with juice, rinse the bottles out with warm water. Leave the solution in the bottles for at least half an hour, turning them once or twice to ensure that every part of the inner surface has been disinfected. Screw the lids on firmly and lay the bottles on their sides. Next, sterilise your bottles by washing them out thoroughly, then filling them with warm water containing a little sodium metabisulphite. To allow the pulp to compost well, mix it with newspaper, cardboard, straw or crop wastes. When you are done straining the apples, make sure to compost your pulp. Then start turning! Crank it down as far as it will go.įor a helpful visual of this process, this is a great video!
